In a cup mix lemon juice, olive oil, salt, and sumac pour over vegetables and mix well | 1 cup of cherry tomatoes chopped into two pieces each• There is no rule of thumb when it comes to which vegetables to use when making fattoush, any kind of vegetables available in your fridge can work |
Fattoush is simply a large bowl of salad that contains a variety of different fresh vegetables and the unique thing about this salad is that it includes pieces of toasted khubez Arabic flatbread which in return can make this salad a meal on its own | My addition to this is to add some fetta cheese or Arabic white cheese crumbled, I do love the combination of the veggies, with multigrain pita chips and the cheese, so this makes this salad a full meal |

As for the dressing, I love to use the traditional Palestinian dressing, olive oil, lemon and salt, lots of it makes this salad full of flavor | And on to add a sprinkle of sumac or mix it with the dressing |
